Let’s cut to the chase, and show you how to make huevos rancheros in a whim.
Ingredients you will need:
- 15 oz of whole peeled tomatoes, undrained
- 2 oz of fresh cilantro leaves, and a bit more for garnish
- 2 oz of diced yellow onions
- 1 large diced garlic clove
- 1 jalapeno pepper
- 1/2 teaspoon kosher salt
- 5 oz of diced cured chorizo, casings removed
- Vegetable oil
- Four 6-inch corn tortillas, plus more for serving (optional)
- 16 oz of refried beans, optional
- 4 eggs
- 1 diced avocado for garnish
- 3 oz of queso fresco or grated Monterey Jack (optional, for serving)
- Sour cream (optional, only for serving)

How to prepare it:
- Use a food processor to mix tomatoes (unstrained, of course), cilantro, garlic, onion, jalapenos, and salt. Once you mixed it into a smooth puree, pour it into a skillet or saucepan and on medium heat, simmer it around 10 minutes, or until it thickens up a little bit. Put a lid on top, and leave it on a warm stove.
- Now let’s prepare our much-loved chorizo. For this, you will need a large skillet. On medium heat, fry the chorizo in its own fat until it turns brown. Once that is done, transfer the chorizo into a saucepan, and cover it.
- As we do not like wasting any of our ingredients (especially when they are this flavourful), use a large skillet in which you cooked the chorizo, add 1 tablespoon of vegetable oil to the remaining fat, and put it on medium heat. Once heated, place a tortilla in the skillet, frying it until it gets a light golden color. It usually takes about 30 seconds on each side. Transfer the tortilla into a separate plate, and then fry the rest of them. Feel free to add more vegetable oil if needed.
- Once again, as we do not like wasting our food, use the remaining oil and fat from the large skillet to warm up refried beans. Beans could be optional, but they are a great addition to this combo. Also, they make a great vegetarian substitute for meat, if you’ve chosen to go with veggie huevos rancheros. Take a spoon and cover the tortillas with beans.
- If needed, add more oil to the skillet and fry the eggs. Make sure that both sides of the eggs are fried until they become almost light golden with crispy edges. It will probably take around 1 to 2 minutes per side. Place each egg on one tortilla, sprinkle with garnishes, and optionally add sour cream on top.
